Recipe Name: Ginger Oatmeal Crisps

Summary:

2 large eggs
3/4 cup sugar
1/4 tsp. ground ginger
1/2 tsp. vanilla
1/4 tsp. salt
1 Tbsp. butter, melted
2 tsp. baking powder
3 1/2 cup quick cooking oats (may need to adjust up or down, depending on the eggs)

Cooking Instructions/Comments : Preheat oven to 350F then cover a large cookie sheet with foil that you have sprayed with Pam.

In a large bowl, beat eggs until frothy. Add sugar, ginger, vanilla and salt. Mix until sugar is dissolved, about 2 minutes. Blend in butter and baking powder, then fold in the oats.

Drop the batter onto cookie sheet in rounded teaspoonfuls spaced 2" apart. Bake 10 to 12 minutes or until the edges are golden brown. Gently lift from the cookie sheet while hot and cool on a rack.

Note: You can add a touch of brandy extract to a batch or a touch of lemon extract... Also adding red or green food coloring to the mixture makes nice festive cookies for the holidays.
